Bleach loses its effectiveness over a short time and must be tested in most cases on an hourly basis. Bleach concentration for effective sanitation is temperature and pH dependent. Bleach is also corrosive to stainless steel and aluminum and can leave a residue on utensils and pans that causes an unpleasant taste in prepared foods and on dinnerware/utensils..
